Smoked Chili Pepper Infused Maple Syrup
Merquén is a chili blend from the Mapuche region of Chile. The peppers are ripened to a dark red color to develop rich flavor then slow smoked over a fire. When we infuse them in our maple syrup, all of the profiles of the pepper – the heat, the smokiness and the rich pepper taste are magnified by the caramel tones of the maple. Use this one over cheddar cheese, bbq, vinaigrettes, roasted vegetables or meats. And just a half teaspoon in a cocktail will give the drink a bit of spice and mystery.

Runamok Maple produces infused, smoked and barrel-aged maple syrup along with our pure maple, which we call, Sugarmaker’s Cut. We love pure maple syrup but have discovered that the potential for taking it in new directions is limitless. Maple marries exceptionally well with a variety of flavors. Some of them are tried and true like cinnamon and vanilla and some are unexpectedly out of this world, like our original Makrut lime-leaf. And our barrel-aged syrups have taken this North American treasure to a whole other level.
